Vanishing Tea—Yellow Tea
Have you ever heard of or tried yellow tea? For 95% of tea lovers, the answer is “No, I have heard of it, but I have never seen it.” As one of China’s six major tea types that is on the brink of disappearing, yellow tea makes up just 0.2% of the entire market.
What is Yellow Tea?
The name yellow tea comes from its hallmark feature: “yellow leaves and yellow liquor.” Its defining step is a unique process known as menhuang (sealed yellowing), where the leaves undergo slight oxidation.
Yellowing is the process of letting tea leaves “stew” under warm, humid conditions (either heaped or wrapped) so they undergo slight-non-enzymatic oxidation and transformation. This gentle stage changes the leaves’ color, aroma, and taste, giving rise to yellow tea’s signature character: golden liquor and yellow-tinged leaves.
The tea’s polyphenols and chlorophyll undergo a gentle transformation. The astringency softens, and the flavor becomes smoother, rounder, and effortlessly mellow on the palate.
During yellowing, the tea takes on an even gentler character, which is especially beneficial for women. Unlike green tea, it’s kind to the stomach and much easier to enjoy. On the palate, the sharp edge of green tea fades away, leaving a sweeter, smoother finish.
Yellow Tea is “Happy Tea”
What makes yellow tea truly “happy” is its exceptionally high content of y-aminobutyric acid (GABA)—the highest among all teas. GABA acts as a natural calming compound by inhibiting excitatory neurotransmitters. This gives yellow tea powerful potential benefits: easing stress, balancing mood, promoting restful sleep, and even enhancing focus.
